Chicken Kiev

Chicken Kiev- A Ukrainian delicacy

So you have a nice bottle of white wine and want to prepare a delicious but different dish to pair with it? Chicken Kiev’s got to be your answer.

Ingredients

Chicken breasts (skinned and boned) – 8

Eggs (beaten) - 2

Butter – 1 cup

Garlic cloves (minced) – 3

Fresh Parsley (chopped) – 2 tbsp

Dried basil leaves – 1 tbsp

Flour

Water – 2 tbsp

Dry bread crumbs- 1 cup

Salt and white pepper

Preparation

Melt butter and sauté garlic in a big skillet, till tender.

Remove from flame and add basil, parsley, white pepper and salt.

Put in a dish and refrigerate till hard.

Pound the chicken breasts till they are 1/4" thick.

Place equal amount of butter on the centre of each chicken piece. Roll the chicken and fold it to completely enclose the butter.

Take a shallow bowl and beat eggs with water.

Take the chicken rolls, dip in the beaten eggs, then in flour, again in egg mixture and finally in bread crumbs.

Put this coated chicken rolls in refrigerator for 1-1.5 hours.

Preheat the oven to 400 degrees F.

Then place the chicken rolls on the baking sheets and bake for 20-25 minutes (or until chicken is golden brown) at 425 degrees F and serve.
